A taste of Jiangnan is making its seasonal appearance as the region's traditional "eight water delicacies" enter peak season.

The group refers to eight aquatic foods popular in the Yangtze River Delta: water bamboo, lotus root, water celery, gorgon fruit, arrowhead, water chestnut, water shield and water caltrop. In Hangzhou markets, water bamboo, lotus root and water celery are currently the summer highlights, while the others will become more abundant in autumn.

Water bamboo is especially popular for its tender, juicy texture and is commonly stir-fried with pork or vegetables. Crisp lotus root is another summer favorite, often sliced thin and served with vinegar and chili. Water celery, though less popular among local households, is widely used by restaurants.

At a Hangzhou market on July 8, water bamboo sold for about 20-24 yuan ($2.8-$3.4) per kilogram, while lotus root and water celery were around 24 yuan per kilogram.

As temperatures rise, aquatic vegetables are expected to enter their peak harvest period, bringing increased supplies and gradually lower prices — offering diners a fresh taste of Jiangnan summer.
